Logan’s Pasta with Pancetta and Peas
It's been a minute since I posted a recipe for you guys. We sold our house and moved last month and ate takeout for lunch and dinner more times than I'd like to admit. We're finally settling in at our rental and I am getting back on the cooking train.
Today I'm sharing a pasta recipe that I named for my friend Logan. I posted a picture of this on stories one night as I was pulling together dinner for my son. I had no intention of developing a recipe for it, but she demanded to know how to make it. Did I mention Logan is pregnant with her third child? When a pregnant woman demands food, you oblige. So here is the official recipe for Logan's Pasta with Pancetta and Peas. The original serving size was for two (Logan and the baby she is carrying), but this recipe should stretch to feed four.
Logan's Pasta with Pancetta and Peas
1 tbsp olive oil
5 oz pancetta
1 cup fergola pasta cooked
3/4 cup frozen peas
Large handful of fresh spinach
1/3 cup cream
Salt
Sauté the pancetta in olive oil over medium heat. When the pancetta is brown and crispy, add the pasta and warm through. Add the peas and sauté until hot. Add the spinach and cream and sauté just until the spinach begins to wilt. Season to taste with salt.
