Easy Weeknight Lamb Kofta
When my husband and I first started dating, he talked about the lamb kofta he would eat growing up in England. At the time, we couldn’t find anywhere to get it in Los Angeles so I ended up developing a recipe for him. It’s still one of our favorites, but involves blending the meat with onion, spices, breadcrumbs and egg and then shaping the meat around skewers and grilling. It’s a little involved. We were recently craving kofta, but I didn’t want to spend the time making it. I ended up sautéing some onion with the lamb and spices and created an easy weeknight kofta for you. Combine the seasoned meat with store-bought hummus, some chopped veg and feta and dinner is on the table in no time.
Easy Weeknight Lamb Kofta
2 tbsp avocado oil
1 small onion, diced
1 garlic clove, minced
1 pound ground lamb (ground beef works too if you prefer)
1/4 tsp cinnamon
1/4 tsp chile powder
1/2 tsp turmeric
1 tsp ground cumin
1/2 tsp kosher salt
1/4 tsp pepper
8 to 10 oz container store-bought hummus
1/2 cucumber, diced
1/2 cup diced cherry tomatoes
1/2 cup feta, crumbled
Pita to serve
Heat a large pan over medium heat. Add the avocado oil and sauté the diced onion until begining to soften and turn transluscent. Add the minced garlic and sauté for one minute more. Turn the heat up to medium high and add the lamb. Sauté until just beginning to brown then add all of the spices (cinnamon through pepper). Continue to cook until the lamb is fully cooked. Remove from the heat and set aside. Spread the hummus around the bottom of a large serving bowl. Add the lamb to the bowl and sprinkle the cucumber, tomatoes and feta over the lamb. Serve with pita for scooping up everything.
