Spinach Salad with Zucchini and Pine Nuts

Spinach Salad

1-5 oz clamshell of spinach

1 zucchini sliced very thinly (mandolin works best)

1/3 cup pine nuts

3 tbsp fresh squeezed lemon juice

3 tbsp extra virgin olive oil

1/2 tsp Maldon salt

Combine spinach, zucchini and pine nuts. Drizzle with lemon juice and olive oil and sprinkle with salt.
