Eton Mess
Allow me to introduce you to the Eton Mess. Essentially a deconstructed pavlova, it’s a beautiful, easy summer dessert I’ve fallen in love with on this trip.
I made my first one yesterday and it was definitely a hit. I’m suggesting using store bought meringues to make it super easy, but if you want to make your own, check out my Pavlova recipe from Easter.
Eton Mess (makes 4 servings)
•1 lb strawberries, washed and stems removed
•1/4 cup powdered sugar divided
•1 pint heavy whipping cream
•12 mini or 4 regular meringue nests
Take 1/3 of the strawberries, blend with 1 tablespoon of the powdered sugar in a Cuisinart or blender and set aside. Chop the remaining strawberries. Whip the cream with the remaining powdered sugar until soft peaks are formed. Break the meringues into bite sized pieces.
Take four serving glasses and fill 1/3 of the way with the sweetened whipped cream. Top with a bit of chopped strawberries, crumbled meringue and strawberry sauce. Repeat layers until all ingredients are used up. If desired, stir each mess slightly to marble the strawberry sauce through the cream.
These should be served immediately. You can prep all the ingredients in advance and assemble just before serving.
