Parsley Oil

Do you ever buy fresh herbs for a specific recipe and then watch the remainder wilt in your fridge until it’s time to toss them? Every time? Me too.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Here’s a great way to use that half bunch of parsley you have tucked in the vegetable crisper. Blend the parsley with olive oil, salt and a little lemon juice to make a flavor booster you can drizzle over roasted veggies, soups and stews or anything that could use a little punch of flavor and color.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Hint...this works with other herbs as well. Try cilantro, tarragon and basil to name just a few.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Parsley Oil⠀⠀⠀⠀⠀⠀⠀⠀⠀

1/2 bunch of parsley, thick stems removed⠀⠀⠀⠀⠀⠀⠀⠀⠀

1/2 cup olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀

1/2 tsp Kosher salt⠀⠀⠀⠀⠀⠀⠀⠀⠀

1/2 tsp lemon juice⠀⠀⠀⠀⠀⠀⠀⠀⠀

Add all ingredients to a high powered blender and process until smooth.
