End of Summer Galette
Well, according to my poll last night you guys are ready for fall recipes, while I’m over here struggling to let go of summer! It’s my favorite season and favorite food and I’m just not ready to say goodbye to all the tomatoes, corn and stone fruit!
If you’re like me and buying way too many peaches before they disappear, this dessert is for you! A galette is basically a free form pie - make a simple crust, pile fruit on top and fold the crust over! Feel free to improvise - this recipe works with just about any stone fruit!
End of Summer Galette
• 1 cup flour
• 2 tbsp cornmeal
• 1/4 cup sugar
• 1/2 tsp salt
• 1 stick cold butter cut into small pieces
• 2 tbsp ice water
• 3 large peaches
• 2 plums
• 1/4 cup sugar
• Juice from 1/2 a lemon
• 1 egg
Place the flour, cornmeal, sugar and salt in the bowl of a Cuisinart and pulse to combine. Add the butter and pulse until the mixture looks like coarse sand. Don’t overmix! With the Cuisinart running, add the ice water and pulse just until combined. Turn the dough out onto a piece of plastic wrap and form into a disc. Chill for at least an hour.
Roll the dough out into a 12 - 14” circle. Place on a piece of parchment and transfer to a baking sheet. Place tray in the fridge until ready to use.
Preheat the oven to 375
Cut the peaches or other fruit into small slices. In a large bowl, toss the fruit with the sugar and lemon juice. Place the fruit in the center of the crust and fold the edges over. Whisk the egg with a splash of water and using a pastry brush, brush the top of the crust with egg wash. If desired, sprinkle the crust with more sugar. Bake for 1 hour.
